Considering that these two models are the only ones that will receive the new Apple AI, other than the 16 lineup, why would Apple discontinue making an only one year old model? Not being that familiar with how long Apple continues to make a particular model, maybe this is usual and customary. Just curious.

It is normal for Apple to discontinue the flagship models after one year. While they’re no longer available directly from Apple, resellers and cellular carriers likely have them still for sale.

Apple doesn't want to compete with themselves. It's all about marketing. If the 16 and the 15 Pro are similar in price, I think many people would choose the 15 Pro because of the "Pro" name. And Apple could not sell the 15 Pro at the same price, because it would be the same price as the 16 pro.
