iTunes errors are common for both clean and jailbroken devices, sometimes you get a hiccup that prevents you from doing your thing. Below's a list of common iTunes errors, and their solutions. If you would like to see one in particular that's not listed, feel free to post and I'll give you the solution as well as add it to the list.
Some of the error codes will have an 'X'. This signifies that there are multiple numbers that X can be but the problems and solutions are still the same. Note that these are just general solutions. They may or may not work. If they do not resolve your situation, feel free to comment and we'll resolve it.

-981X/-980X | Correct the system time and date on your computer and reboot your computer to fix this issue. |
-1 | 1) You just downgraded your iOS and may have preserved the baseband. Use a Recovery Fix from an application like RedSn0w or TinyUmbrella to kick the device out of Recovery Mode. 2) If you cannot restore your device again using RedSn0w or iTunes, your device is bricked from a bad restore. |
1 | Your device was interrupted during the restore process. Most likely, you were trying to preserve your baseband or you used a bugged application such as Sn0wBreeze to do it. Run TinyUmbrella and allow the baseband to upgrade. Then attempt to restore again. |
11 | The baseband components of your IPSW has been corrupted. Download from another source. |
13 | 1) USB Error. Uninstall your USB drivers and reboot. 2) You're attempting to install a pirated beta IPSW. 3) You're attempting to install a beta IPSW on a non-Mac OS |
14 | You're attempting to update your device to a custom firmware that might be corrupted. Use a different application to stitch the custom IPSW |
21 | You're attempting to restore in Recovery Mode and not in DFU mode. Put your device into DFU mode first. |
23 | 1) Your radio chip is faulty. (Usually only occurs on the 3G and 3GS) You're in need of a new device or a new radio chip. 2) Water damaged. Clean your iPhone's internal hardware using the proper measures |
27 | Flashing a custom iOS (not IPSW) to a device that's not supported. Restore to a supported iOS to prevent bricking. |
31 | A.K.A. DFU loop. Restore to the latest firmware to fix. Then attempt to downgrade again (if possible/applicable) |
37 | Boot logo error for Sn0wBreeze. De-select all boot logos and retry. |
1002 | An error has occurred during the restore process. Restart iTunes and try again. |
1004 | Basebands on the device is not matching the blobs. Use an application with Recovery Fix to kick the device out of Recovery Mode |
1011 | Corrupted iTunes DLL file. Uninstall iTunes, delete the local files and re-install iTunes. |
1013 | One of the possible errors after preserving/downgrading your baseband. Negligible. If your device is in Recovery Mode, just use a Recovery Fix to kick it out |
1014 | Attempting to downgrade your baseband on a device that's not supported. Do not push further or you'll brick your device. |
1015 | You are attempting to restore to an iOS and your baseband is higher than what the new baseband is. This should ONLY occur on an iPhone 3G/3GS and 3G iPads. Your baseband is flashed to a higher baseband value. Downgrade your iPad baseband to a regular baseband using RedSn0w and try to restore again. (Ex. Your 3GS is flashed to the iPad Baseband which is 06.15.00, and the latest baseband for the 3GS is 05.16.07. The value is higher, therefore you'll get this error). If that does not work, use TinyUmbrella in conjuction with a custom IPSW to restore back to a clean iOS |
141X | USB Error. Uninstall your USB port drivers and reboot your computer |
1600 | 1) Attempting to restore to a custom firmware (often times preserving baseband). Make sure your device is in Pwned DFU mode (pre-A5 devices only) 2) Your APTicket is invalid. This occurs mainly for the 4S and iPad 2 with their re-restore process. Your iOS was installed/upgraded OTA or in the factory, therefore your APTickets cannot be used. Your only option is for your device to stay as is, or for you to upgrade to the latest or another iOS (if applicable) |
1601-1604 | USB Error. Directly connect your device to your PC using a cable instead of a dock, then try another USB port. Uninstall your USB drivers and restart your computer. If this does not fix your error, you'll need to use another computer to restore. |
1618 | An iTunes file has been corrupted. Uninstall iTunes, remove all of the locally saved data, reboot your computer and re-install iTunes. |
200X | Disconnect 3rd party devices and reset the SMC. (Only applicable to Macs) |
3194 | 1) Host error. Very common. Make sure the iTunes process is ended. Edit your Host file and remove any guzzoni.apple lines (gs.apple.com). Delete the Host.Umbrella file that's in the same directory as your Host file (if applicable). Flush your cache/DNS or reboot your PC. Retry. 2) ("This device isn't eligible for the request build") You're restoring using the wrong IPSW. This is mainly applicable to the iPhone 4. Make sure that you're using the correct IPSW. iPhone3,1 headed IPSW is for the iPhone 4 GSM, iPhone3,2 is for the China/True Unlock iPhone 4 GSM and iPhone3,3 is for the iPhone 4 CDMA. Make sure it matches your device. If your iPhone 4 has a SIM tray, it's a GSM model. If there is no SIM tray on your iPhone 4, it's a CDMA model. |
11222 | Your firewall/antivirus is conflicting with iTunes. Temporarily disable your firewall/antivirus or make an exception for iTunes and retry. |
