Custom Label for some contacts and not others?

I was pleased to discover recently that I can create specific labels for phone numbers for my contacts to better associate them with their pupose. However, I can't seem to do that for all contacts. Is there a specific type, ie those only on the phone vs those pulled from Outlook, that allow that or am I simply overlooking something simple?

I don't know about outlook but you can add specific ring tones to any contacts you are able to edit and are already present in your phone
