Delete a email from iCloud

If I have an email that got automatically backed up yo iCloud and I want to remove this one email from iCloud, how do I do this without deleting the entire backup from iCloud.

You can't delete individual items from a backup, it's all or nothing. You'll have to make sure the email is no longer on your iPhone, delete the iCloud backup, then make a new backup which doesn't include the email.

According to Apple support emails are not stored in iCloud. Only the email account settings
