I have been having problems with lag and freezing on my phone, not getting alerts etc. So before I contact Verizon I want to do a factory restore because I am sure that is going to be the first thing they ask me to do.

I have never backed up a phone before, I dont think, I can do it through ITunes or is there something on the phone to set it up through ICloud?

Absolutely NOT a dumb question at all. Many users think that the brief second of "backing up" while syncing refers to backing up the entire device, which in reality, isn't a backup at all. Plus it's better to be sure than to walk in blindly.

And you can most definitely use iTunes to do so. You'll need to open up your device's profile by clicking on your device on the left-hand taskbar. Then click on Backup. I personally prefer to backup to my PC directly, which can be a lot faster than iCloud at times, plus you're not limited to the stock 5GB storage on iCloud (unless you've bought extra storage).

Before you rip your hair out with VZW customer support, I'd recommend simply restoring the device yourself using iTunes and see if that helps. 9 out of 10 problems can be solved by performing a restore at home. Here's a little guide that you can follow here to do so. You don't necessarily have to use DFU mode in your case since it's a stock device, but that's up to you, I prefer DFU mode to tone down any potential errors iTunes can suddenly throw out at me.
