Facetime without wifi

So I've heard I can FaceTime without wifi on my new iPhone 4s how? Cause it wouldn't let me just now help!

Two ways.... Jailbreak your phone (currently no JB available for the 4S, sorry) or connect to a Mobile Hotspot.

Alright thanks can't I turn my phone into a mobile hot spot? Would that work for me to FaceTime on the go?

Unfortunately no. You have to be connected to an external Hot Spot.
