please help. I have been at work all day today (in a hospital theatre) where I get poor intermittent signal depending on whether I am in theatre, in the coffee room or on the ward. During the day the find my friends app which my partner and I use has shown me at some very random locations in the area, places which I have never been to! Why does it do this?

GPS signals in buildings can be very weak, especially in hospitals due to how they are constructed and building materials (for patients safety).
When outside, you typically can lock into at least 8 GPS satellites. The more satellites your phone can lock into means greater accuracy in location. Inside heavily shielded buildings, you may only have a lock on 2-3 satellites with poor signal which will report your location sometimes blocks away from your actual location.
There is nothing you can do to correct this while inside at your work.
