How can i change iTunes default behavior?

I have transferred the music from several CDs to iTunes on my PC but cannot see how to get them transferred to my iPhone (4). I won't sync my iPhone to my PC because of problems I gave had in the past (loss of data, failed restores, etc.), and anyway all I am offered is a sync of music only, which ought to be what I want, but comes with the warning that my entire iPhone iTunes library will be replaced and overwritten with what I have on the PC. Is this really the only option I have? Can't I somehow just identify the pieces I want to transfer and just DO it?

I love my iPhone but I really REALLY hate iTunes.
