iMessage

Hello all,
I'm new to this forum and I have a few questions. First I would like to say that I had purchased my unlocked/jail broken(tmobile) iPhone 4s using iOS 5 on cydia back in march this year. I love it so far and I haven't experienced any problems with it. I noticed when using iMessage to text another iPhone, the message goes thru to the person I'm trying to message but instead of my number showing, they get my email address. What's causing this?

Also my friend has the iPhone 4 and when taking pictures at night we took some sample shots together and her pictures came out better then mine. What's going on here? Hope someone can shine some light on this thanks in advance
