It's safe to jailbreak it, you are not going to lose your unlock since it's unlocked from factory.

When a new ios update comes out is it possible to update the factory unlocked jailbroken phone?
will it lock up? will it just delete all the cydia apps?

You will lose your jailbreak if you upgrade to a new iOS. the only version of iOS 5 which can be untether jailbreak is the one you are having now. But upgrading to a new iOS will not do anything to the fact that your iPhone is a factory unlocked iPhone, it will still be the same factory unlocked iPhone no matter what you do to the iPhone.
