so i want to jailbreak my 4s to test it and stuff, so when 5.1 comes out, do i just do a dfu restore so that it dosent get bricked? im fine woth losing the jailbreak

If you want to update when 5.1 comes out you simply connect to iTunes and click update you will loose jailbreak
