Have 2 older iphones here. SE (2016) and my wife's 7plus.
Have an acrobat PDF I need to study. Its a scan with many pages.
On the old tiny SE I can compensate by turning to landscape view. However on the 7+ it only views the pages in portrait style.

Can we turn to "landscape" for the pages on the 7+??
 
It should be possible.

In Settings - Display & Brightness - Display - Display Zoom, select „Standard“ or „Default“, whichever you find there. If you use Zoom/Larger Text, the screen will not rotate.

Then swipe up from the bottom on your Home screen, to show the Control Centre. There should be an icon that looks like a lock with a circle around it:

If it looks like the one in my screenshot, tap it once to disable Orientation Lock.

Another PDF question - Can I hide the blue Note button in the bottom right corner?
 
This seems to be one of the default features you can‘t change. There‘s no setting that disables/enables it.
