Is it possible to hack an iPhone?

This is probably a strange question. I'm not too familiar with this side of technology, and I am a writer trying to figure out a problem in my story.

Is it possible for someone (call him Bob) to hack someone else's (call him Joe) iPhone? That way Bob can send text messages using Joe's phone number. Basically Bob wants to send a text to someone but needs the number if comes from to appear as Joe's. Is such a thing even possible?

It is possible, but it would be illegal almost everywhere else. This forum cannot help with anything that would be used for an illegal purpose.
