you can install BackupBot in your iPhone. I have used it for deleting text messages. Hope it will also work for e-mails.

That probably would depend on the app you use to handle your mail, and maybe even who does the email service. I use a gmail email account and select all, then deselect ones I want to keep on my PC with their webmail API. I don't delete all email from my iPhone or iPad. Just some things they didn't think of when designing the app. (at least I haven't noticed that feature.
