I was going to jailbreak my iPhone 4s, until a someone told me that if I did that my iPhone won't be able to up grade to any of the new iOS that apple will bring out in the future, and that my warranty will not be valid.
 
Jailbreaking your iDevice does void your warranty. If at any time you need service performed on your iDevice by Apple... you can do a restore via iTunes to wipe all traces of the Jailbreak. As far as updating after a Jailbreak... yes, you can update to new iOS versions as they are released. However, when you do this you will loose the Jailbreak that was good for iOS 5.1.1. Until a new JB is released for the newer iOS version.
 
If I do decide to go ahead with the jailbreak will all my apps still work, or will I have to download them again
 
Yes, all your apps will still work. However, it's always a good idea to create a backup via iTunes just prior to performing the JB. Just in case something does happen during the process. That way you'll have a good restore point to go back to.

I used absinthe for my iPhone 4s very easy, and it makes the iPhone much more useful
