I have a phone locked to a Canadian network.
Can I jailbreak and unlock this in another country or does the SIM need to be able to register on its own network?
 
The only iPhones that can be unlocked after jailbreaking are the 3GS and the 4 (01.59.00 baseband only), both must be on iOS 6.1 or below. Other than that, you'll need an interposer or an IMEI/carrier unlock.

The phone is locked to Fido in Canada but I want to use it on Three(Hutchinson) in the UK - will that work with a Gevery iOS 6 interposer?
Do I need to consider any GSM, CDMA issues?

Are Fido (Canada) and Three(UK) both GSM networks?

Also, how do you configure it to know which SIM it is supposed to be faking?
 
When you unlock a device, you don't have to fake anything, it's open to allow everything.

but how does a interposer unlock it? I thought it had to be unlocked with the network/Apple?
 
Interposers act as middle men for your SIM card. It's literally a card or tray (or combo) that you slip your SIM on and put it into your SIM slot.

From what I read (probably incoreect :) ) - it has to simulate, in my case, the Fido card as that is what the phone is locked to. So, I would put in my Three network SIM and it pretends it is a Fido SIM. How does it do that without me configuring anything?
 
That would be the case for an interposer. For an IMEI/carrier unlock, that's not the case. For the Gevey, you'll have to access Settings to initiate the process, meaning you'll need access to your phone's springboard so that you can open up Settings. It's not complicated, just takes a few minutes tops

Can I do this in any country or do I first have to add the ineterposer in the country of locking eg Fido Canada?
 
Interposers are device, iOS and baseband dependent, not origin dependent.
