Keyboard and sms messaging??

ok I need help, I can't stand the voice talking when I'm typing my sms messaging. Sometime it comes on and sometime it doesn't. I don't want people hearing what I'm texting so how do I turn this feature off??? and is there a way I can change any of the setting in my messaging??? Like font to background color to anything??? Thanks for your help..
