Is there a legitimate way to mark a text message as unread on an iPhone 4 running iOS 7.1.2?

That's not possible with a stock iPad in the Message app.

Not unless you're willing to jailbreak your iPhone. There are tweaks available for jailbroken iPhones that will allow you to mark messages as unread.

I received a previous message to my inbox that stated "Open the email, tap the flag and select "Mark as Unread". Does that apply only to emails or also to text messages?

This is just for emails. It doesn' work with text messages.
