Can you change the notifications for your e-mail and text?
I changed the ring tone to my song, but don't know how to do e-mail and texting sounds/notifications.

You can't change the notification sound for email or texts just yet unless you jailbreak.

iOS 5 when it is released will let you do this without a jailbreak...
