"sent to" email addresses...storing on iPhone?

Hi...I send a lot of emails to different folks, and my iPhone is storing every one of them. It then makes it difficult to find my contacts when sending mail. How long are these addresses stored? Will they go away? Is there a way to stop this? Thanks for your time!
