What happens to jailbroken apps when you upgrade the OS?

I have an iPhone 4 jailbroken, 4.3.5. If I upgrade to iPhone OS 5, what happens to Cydia and all of my jailbroken apps? Do they just disappear completely, or do they remain on the phone but become unusable? Will iTunes give me error messages or fail to update due to the jailbreak? Can I just upgrade to OS 5 and then jailbreak again?

You lose them completely. Upgrading removes your jailbreak and everything you've installed through Cydia.
