Jailbreaking your iPhone is the only option. There's several tweaks... and BiteSMS (an amazing Messages replacement) that allow time stamps for individuals messages.

Yes you have to jailbreak.

I prefer something called "SMS Timestamps".

It doesn't change anything with your standard messaging application except adding timestamps to your messages.

You can self decide wether to set timestamp on every singel message or every 5 minutes.

Simple, easy and very handy
