Ok, here's the update (sans single-malt) downloaded the item mentioned above, said it has to go through i-Tunes. Did all that, checked phone and says it's running 5.0.1, tried running redsn0w again with directions listed above and none of the options above were there. What am I doing incorrectly? Does this firmware download have to be run through iTunes? Is that the problem?

You can get the firmware from Download iOS Firmware as long as you are using redsn0w 0.9.9b8 you will have the options. Just hit "Extras" then "Select IPSW" then select the 5.0 IPSW you downloaded hit back and hit jailbreak and then do the same and use "Just Boot" under "Extras"

Sounds like you are using the wrong version of redsn0w. It must be the latest one, which you can get from here - Dev-Team Blog - redsn0w iOS5beta

Ok, I have everything and I was moving along and got hit with a warning message about how late my phone was made. Says that if the serial number is for a latter date, I'll probably have to do an emergency restore session if I proceed. Now what? Is there are way around this?
