i phone 12 setting esim

Hi, i travel alot for pleasure and on my next trip id like to use an esim. Thats straight forward enough but i hear stories of people not setting there settings correctly and not only are they paying for an esim theve actually been charged by there carrier also. so im asking what do i need to do in settings many thanks
