Go to Settings>General>Accessibility>Grayscale and slide the switch to off. Your colours should come back to normal.

Triple click the Home button. If you use Grayscale in Accessibility Shortcut, this will disable it again. Then go to Settings - Accessibility - Accessibility Shortcut and un-checkmark Greyscale there. A triple click of the Home button can happen easily, and would enable Greyscale again.
