Sorry if this has been asked but for the life of me I can't figure out how to shut off auto sync in iTunes..... Every time I plug in my phone all the apps I have install to my phone.... How do I shut this off?

In iTunes, with your iPhone unplugged, go to Edit > Preferences > Devices. Check the box that says something like "stop auto syncing of iDevices when connected." And you're done. The next time you plug in the phone, it will not start up with a sync.
