I had the same problem. Actually had to restore my phone and do the jailbreak again. I just never re installed winterboard and everything works fine. May e they're be an update sometime in the future. Hopefully. Any news on this will be greatly appreciated
I've restored my phone too and rejailbroke it completely. The only reason I even attempted Winterboard again was because a site was saying that it was compatible with iOS 5.
Thought maybe it was just my phone, but I guess it's everyone!
There is an IOS5 beta version of Winterboard kicking about, but it is not live in Cydia yet...

winterboard is still in the beginning test phases with iOS5 ..... wait till the official release comes out then you should be golden.
I had the same problem.
Solution? Don't use redsn0w for the boot-time injection. Use iBooty.
I did the jailbreak on iOS5 by generating a pre-jailbroken IPSW with sn0wbreeze, and using iBooty for the reboot.
Download sn0wbreeze and iBooty
it will take a while for all apps to work properly in ios 5, some already do but very few afaik... after waiting for a new jailbreak the second part of waiting comes from waiting for developers to port their apps (if they decide to)
