I have an extremely newbie question. I am thinking about jailbreaking my phon; everything backed up, cydia ready, but there was 1 thing I hated about rooting my android, going back thru all the preference settings and email settings everytime (until I went with a mod that took care of all that). When I restore from itunes will I end up with basically a 'green' unit and have to reset everything, reupload music, pictures, tweak all the settings like I like them, all the stuff you do with a new phone or will the sync and restore resolve those.

iTunes backs up pretty much all your settings. If you have a non-jailbroken iDevice, it will look identical before and after the restore. In order to backup your jailbreak purchases, you should get a Cydia package such as xBackup. Otherwise, you will need to manually re-download all your Cydia packages.
 
iTunes restore will give you the option at the end whether to 'set up as new' or resync all your stuff back onto your phone. If you made sure to back up before you restored it should be just exactly as it was. Mine even restored notes.
If you are on 5.01 already you don't really need to restore before jailbreaking. Just run redsnow 9.10.
You only really need to restore to latest firmware if you are already jailbroken on an earlier firmware, like I was on 4.2.1

If you should decide to restore, the order I was advised to do was:

1. Restore to 5.01
2. Jailbreak using redsnow.
3. Resync all your music and apps etc.
4. Start adding Cydia packages


Also, if you are updating an already jailbroken phone, I would recommend reinstalling cydia packages one by one, rather than using a back up to do them all in one go. If some of them are no longer compatible you won't know which one to remove.
