JA is on to something. I will try sending myself an email next time I have this problem. If that doesn't work I am going to try doing what I just read about doing a Google search: the poster noted that removing email from the spotlight search list solved the problem. I believe they later added email back to the search list but I am not sure. I will report back but because this is a sporadic problem, it may take a while.

At first I thought it could be a third party keyboard that I was using. Since then I have spoken to a friend who has a 5s and he has the search problems as well since he upgraded to ios8. So this most probably is an issue that has to be addressed in a sofware upgrade, maybe?
I had this problem on my iPhone 5 and I never upgraded it to IOS8 so this problem is not limited to IOS8. When I searched Google I found people complaining for a couple of years. I think it has to do with indexing and the mail settings. I still only use the native keyboard so it's not that.
