The usual back up?

I almost weekly back up my iPhone through iTunes. Now that I did the JB do I still back up this way??

I do it biweekly unless I have major changes on my devices. It's just to be safe. If you don't save much data like i do on my work phone, you can do it monthly or bimonthly.

Create a different instance of the backup and that should be fine

Another newbie question. How would I do that?

iTunes should keep track of your backups for you. The newer backups will be on their own based on the date and time. I'll see if I can pull up iTunes in a little bit to show you where it is specifically, but no, they won't delete the prior ones. But when restoring, remember which backup is which.
