actually in a simple way to explain it it unlocks some of the restrictions apple has on the phone, so you can now explore the individual files and folders on the device, this allows you to alter files to theme the device

jailbreaking also installs an "app store" sorta of calle Cydia that has all kinds of fun tweaks and themes that apple does not have in the app store
