How can I update Iphone 4s from 5.0.1 to 5.1.1 avoiding ios6

Side question,

I googled 5.1.1 download, and I found some websites that have the 5.1.1.ipsw file. If I click restore holding down shift, find the file, wouldn't I be able to restore it using 5.1.1? Therefore restoring the phone without having iOS 6?

I've got SHSH blobs for 5.1.1
Do you reckon it could be possible to upgrade from 5.0.1 to 5.1.1 on an iPad having the SHSH blobs?
