So confused over errors 3194 & 1600 and how to overcome them!

Hi all.

I've got an iPhone 4 running jailbroken iOS 5.1.1.

It's crashing a lot and running slow so I'd like to back it up, erase it entirely, reinstall 5.1.1, re-jailbreak it, and restore from the backup. I don't want 6.01 yet as it has no untethered jailbreak option available and without the jailbreak it will be serious downgrade for the phone!

Problem is every time I try, I get the dreaded 3194 or 1600 restore error and despite trying to follow all the guidance I can find on the web, I'm getting almost nowhere! Can anyone help guide me?

I've tried:

Using a Mac and a PC

Editing the hosts file to include:

17.112.176.11 gs.apple.com & ​

74.208.10.249 gs.apple.com ... and also specifically NOT to include either.

Using TinyUmbrella. I've set 'Set Host to Cydia on exit' both ON and OFF and now it's greyed out so can't be changed anyway.

Using iReb on the PC.

Plugging and unplugging the phone.

Rebooting.

Praying.

Holding my breath.

..... etc. I still always get either the 3194 or 1600 error.

Any ideas anyone? This is SO frustrating! Where am I going wrong??!
